Can I hide a particular shipping method or carrier for some products?

Yes, in Magento 2 you can remove the shipping method step from checkout for desired products based on the attribute value. 

In Magento 2 to disable shipping method you can add an attribute to a product called "can_ship_ups" and then set “False” for it where needed.
